Frozen Meyer Lemon Meringue Tart with Gingersnap Crust and Blueberry Compote

I made this for Emily’s birthday dessert and it was fantastic. Easily the best lemon dessert I’ve had. However, it’s pretty time consuming with lots of different steps, but good for a special occasion. I didn’t have meyer lemons, so I used this substitute which was very good and very close to the meyer lemon taste.
