Honeycrisp Apple and Kohlrabi Salad with Burnt Chile Chimichurri

Great side dish from Cheers to the Publican, which is an awesome cookbook. The chimichurri takes a bit of time to make, but the rest of the salad comes together quickly. You could make this every day for a week and be happy.
