Spaghetti alla Carbonara with Homemade Pancetta

IMG_2489The first thing I’ve made from Ruhlman’s Twenty was this homemade pancetta/bacon. It was a lot of fun and definitely something I’ll do in the future. In the future when I get a Green Egg, I can smoke this and turn the pancetta into bacon.

The Carbonara was also pretty good. Just as easy as the Spaghetti Aglio Olio or Caccio Pepe and about just as good. Good thing to have in the rotation.

Lessons Learned The only difference between pancetta and bacon is that bacon is smoked, and pancetta is roasted. Both are just spiced/cured pork belly.
