Pizzoccheri with Brussels Sprouts, Potatoes, and Fontina

This was a really unique pasta dish I wanted to try. The buckwheat noodles were pretty interesting and a fun challenge. Emily and I both liked this, but given the many homemade pasta dishes available to make, I probably won’t make this again.

Lessons Learned Buckwheat flour is super interesting. Provides an interesting early flavor to the pasta
Any Recipe Deviations? Nope – my dough ended up being really brittle and it was a struggle to ultimately roll the dough out well enough. Maybe try more milk next time to add moisture
