Kabocha Squash and Carmelized Onion Galette

After a very poor galette dough showing back in Cincy a few months ago, I was glad that this dough turned out perfectly. Wonder if it was the extra time in the fridge or that I used sour cream instead of greek yogurt or neither? But either way, this dough was perfect. The filling was pretty good, but not good enough to be a Thanksgiving appetizer like I was hoping.

Any Recipe Deviations? I used Kabocha instead of butternut – probably would be slightly better with butternut
Make Again? I would, but there are many a galette filling out there I would try first
