Emily’s favorite thing I’ve ever made is Barefoot Contessa’s Pumpkin Spice Cupcakes. I wanted to make something like this for Thanksgiving, so I tried converting this into a layer cake and it was pretty fantastic.

Recipe Source I bred Ina Garten’s cupcake recipe (which is incredible) with the Christina Tosi layer cake recipes

Time to Complete ~3 hours plus 4 hours of freezer time

Leftovers? Yes, this was good for maybe 5 days after making it. It actually got moister with time
Lessons Learned This is delicious. I just used milk and vanilla as the soak
Any Recipe Deviations? Only needed 1.25x the amount of icing vs. 1.5 the amount of cake recipe
Make Again? Yes
Changes Next Time? Increase the maple syrup
