I made this a long time ago and Em always really liked it so figured I’d give it another go now that it is tomato season. This was pretty delicious and remains the easiest way to make homemade gnocchi, even though it kind of hurts my soul to cheat by using instant mashed potatoes. But it is so much easier and the texture is almost as good. Especially when you’re going to make a flavored gnocchi anyway, the potatoes don’t need to be the star of the show.

Any Recipe Deviations? I didn’t have pine nuts, so I did not use them, but they would be better with them.

Changes Next Time? Add pine nuts. I actually don’t think this would be better with other/additional herbs – would overpower the light sauce too much
