Corn Pudding with Poblanos and Queso Fresco

It’s not often that Emily and I differ so widely on our taste in food, but here is a good example. I thought this was pretty amazing, and Emily could not even eat it. As is typical with Suzanne Goin’s recipes, this is very complex and takes forever, so probably won’t make it again, but I really liked it.

Lessons Learned Em really does not like the texture of corn pudding or poblanos that have not been diced very finely
Any Recipe Deviations? I didn’t have queso fresco, so just didn’t add the extra cheese. It was totally fine without it
Make Again? Probably not given the amount of work it is and how little Emily liked it
