Alaskan Halibut with Carrot Puree, Asparagus, and Pistou

2 for 2 for the new A.O.C. cookbook. This probably had the most complex flavor profile of anything I’ve cooked. Lots of different things went into it, and they all fit together really well. Overcooked the halibut unfortunately, but very delicious nonetheless. The carrot puree is delicious on its own – a good, healthy alternative to mashed sweet potatoes
