Gnudi with Pesto
Attempt number 3 making April’s gnudi. Emily thought this was the closest yet, though I was kind of disappointed with their shape. What we agree on is that it is delicious with pesto.

Leftovers? Nope, but easy to change recipe size to accommodate party
Lessons Learned Emily likes the cheap, wet ricotta more than more expensive
Any Recipe Deviations? I used regular cow’s milk tub Ricotta rather than fancy sheep’s milk. I personally found them really hard to make and shape, but Emily thought the texture was the closest yet to Spotted Pig’s.
Make Again? Yes – really good with April’s pesto recipe
Changes Next Time? Use more Parmesan so the mixture isn’t so wet
