Za’atar Tilapia

We are on an Ottolenghi streak this week. When we were in London, I picked up some Za’atar at his restaurant and have been trying to find something to use it on. We wanted a quick easy dinner tonight so I just brined some tilapia for 10 minutes, then sprinkled 1/8 tsp of sugar, salt, pepper, and za’atar on the tilapia. Fried it in a non-stick skillet with ~2-3 tbsp of olive oil for 3 minutes on each side, and it was delicious. Very easy, quick, cheap meal that we will make again.
