Wheat Berry Salad with Orange and Scallions

I’m a big wheatberry salad fan, but had never made it at home. Turns out a wheatberry is just the whole wheat kernel cooked in a manner (simmered for an hour) that gives it the soft, chewy texture that is so delicious.

Lessons Learned Wheatberries are pretty delicious. Unfortunately Em doesn’t like them the same way I do (with berries, feta, and/or nuts)

Changes Next Time? Probably try some of the other recipes out there – lots of interesting ways to make this
