Marcella Hazan’s Roasted Lemon Chicken

This is my first Marcella Hazan recipe I’ve tried, but won’t be the last. Very simple and delicious, and could easily be adapted to change up the flavors. It’s also really healthy and cheap. Win win.

Leftovers? Yes – serves 4 comfortably
Lessons Learned This is a delicious and easy way of cooking chicken. Having the lemon (or any other citrus) inside the chicken while it roasts prevents me from having to baste the chicken and results in a very moist and flavorful meat
Any Recipe Deviations? I added rosemary (one sprig) and garlic (3 cloves, smashed) inside the cavity and leaves from one more sprig of rosemary on the outside
Make Again? Yes definitely
Changes Next Time? No changes, but you could also do lots of different rubs on here which would be delicious. Herbs de provence + lemon, cilantro and cumin + lime, Jamaican Jerk seasoning + orange, etc.
