Lessons Learned I like kimchi, as it turns out
Any Recipe Deviations? I used a smaller pork shoulder than the 8-10lb required. Also used red wine vinegar instead of sherry vinegar
Make Again? Yep, for sure. Good crowd-feeding meal
Changes Next Time? Maybe use better pork (Berkshire?) next time. But fine even with the cheap $1.5/lb pork
