Pan-Roasted Pork Chops with Yellow Pepper Mole Sauce

Another recipe I stole from my mom’s cookbook collection. This mole was delicious – really complex, tasty flavor that complemented the pork chops really well. The only negative is that it took forever to make.

Any Recipe Deviations?  Nope
Make Again? Yep, but would probably double sauce so that this can provide enough leftovers to make it worth the amount of time it takes
Changes Next Time? Add a roasted jalapeno to the mole to give it a little spice
