Mesa Grill Spinach

This is a really basic way to cook spinach that is pretty delicious. The main difference here is that we used flat-leaf spinach rather than baby spinach. In my opinion, this resulted in a meatier spinach that did not wilt as much, which is a definite plus. Effectively, you just melt butter in a pan (this recipe called for 12 tbsp which was way too much – would be fine with 4-6 probably) and then add the spinach, salt, and pepper and toss it around until it just begins to wilt (2-3 minutes). Then you’re done. Sprinkle with some Maldon and it is a delicious, easy side.

Lessons Learned Really easy / basic way to make spinach. Using the flat-leaf spinach is definitely much better than using baby spinach

Changes Next Time? Use WAY less butter. Would probably be fine with 4-6 tablespoons. Could also use olive oil to get this a little healthier
