After watching Thanksgiving Live, I wanted to try out this recipe from Ina Garten. I thought it would be part of a nice, easy meal before Thanksgiving on Thursday, but dinner ended up taking 3 hours with 6 different pots on the stove top. Child please.
These were pretty good, however. Basically just like mashed potatoes (creamy, gooey texture loaded with butter).

|Make Again?||Eh – maybe. Nice substitute for mashed potatoes, but it’s not like we make mashed potatoes very often anyway. Emily liked these a lot though|
|Changes Next Time?||The shallots took forever to get crispy. You should not lower the heat of the oil to low – keep it on medium-low, perhaps even raise it.|
