Bobby Flay’s recipes are always phenomenal. This was another great brunch recipe that is not overly-difficult.

Keralan Fried Chicken, Lowcountry Cardamom Waffles, and Spicy Maple Syrup

Emily’s Rating Chris’s Rating
8 / 10 8 / 10

I got my first new cookbook in awhile, and this recipe was the one that really stuck out to me. It was phenomenal. I would not say the fried chicken is better than Thomas Keller’s, but it is different and lends itself well to chicken and waffles. The spiciness from brining in buttermilk with serranos is not overpowering, but present and tasty.

Difficulty 7 / 10
Time to Complete 24 hours – 1.5-2 hours of active time
Sides Served Roasted Broccoli
Leftovers? Yes, makes plenty

Any Recipe Deviations? Nope

Changes Next Time?  Double-breading a la Thomas Keller’s fried chicken results in better texture, but flavor is great as is.

Spaghetti Squash with Kale Pesto and Burrata

Emily’s Rating Chris’s Rating
8 / 10 7 / 10

Emily really liked this spaghetti squash dish. I like it more than the other spaghetti squash recipes in the repertoire, so will put it up as a keeper. With a little less burrata, it would be decently healthy and a good vegetarian option.

Gnudi with Cavolo Nero Sauce

Emily’s Rating Chris’s Rating

This was so tasty I had to resurrect the blog so we can make sure we remember this recipe and make it again.

Dish Gnudi with Cavolo Nero Sauce
Recipe Source James Beard Website
Difficulty 5 / 10
Time to Complete ~2 hours of active time, dough needs to rest for 2 hours minimum, however
Sides Served Cauliflower
Leftovers?
Lessons Learned This is a really different way to make gnudi compared with April Bloomfield’s – the result is a dough that is much easier to work with, but more like really light, billowy gnocchi, rather than a liquid cheese ball like April’s. Both are delicious, this is just much easier
Any Recipe Deviations?
Make Again? Absolutely
Changes Next Time? Nope – the Tuscan Kale sauce was really tasty, and would be really good just with store-bought gnocchi as well for a fairly quick and easy dinner

This was a really delicious, super easy grilled chicken dish. There was a good amount of spice – not too much for us, but if we made for others we may dial it back a bit.

This is the best thing I’ve made in awhile and fairly easy relative to Suzanne Goin standards. Super flavorful, really good. Full meal in one dish.

Grilled Chicken with Garbanzos, Corn, and Chile-Cumin Butter

Emily’s Rating Chris’s Rating
7.5 / 10 7 / 10

Another really tasty Suzanne Goin recipe – this one’s actually pretty easy compared with her normal recipe. I’m going to combine this one with the Cook’s Illustrated way of grilling chicken to make my own take on this that will be even better.

Dish Grilled Chicken with Garbanzos, Corn, and Chile-Cumin Butter
Recipe Source  AOC by Suzanne Goin
Difficulty 5 / 10
Time to Complete ~1 hour or so. Short by Goin standards
Sides Served  Full meal in one dish
Leftovers?  Yes
Lessons Learned Grilling BS Chicken breasts is dangerous. These NEED to be brined before hand. Or just use bone-in because it’s so much better
Any Recipe Deviations?  I used canned chickpeas because I have never seen fresh garbanzos ever. I also used powdered Chile de Arbol in the butter, because I didn’t have dried peppers. Would’ve been better with dried peppers, but was still fine
Make Again?  Yes for sure
Changes Next Time? Make it like the Lemon-Rosemary grilled chicken from Cook’s Illustrated (i.e. baste the bone-in chicken with the butter as you cook it)
