Sunnyside Duck Egg Tacos with Green Chorizo Gravy

This is super tasty breakfast item, though better with homemade biscuits than it is with tacos. The green chorizo gravy is pretty unbelievable – restaurant worthy.

Frozen Meyer Lemon Meringue Tart with Gingersnap Crust and Blueberry Compote

Emily’s Rating Chris’s Rating
8 / 10 9 / 10

I made this for Emily’s birthday dessert and it was fantastic. Easily the best lemon dessert I’ve had. However, it’s pretty time consuming with lots of different steps, but good for a special occasion. I didn’t have meyer lemons, so I used this substitute which was very good and very close to the meyer lemon taste.

Smoked Pulled Pork

This is the best pulled pork recipe I’ve used yet. Injecting the meat, I believe, is the key to having really moist and tasty meat. Next time we should try an apple juice or other sweeter rub. I also used the Aaron Franklin BBQ sauce recipe which is really easy and tasty.

Honeycrisp Apple and Kohlrabi Salad with Burnt Chile Chimichurri

Great side dish from Cheers to the Publican, which is an awesome cookbook. The chimichurri takes a bit of time to make, but the rest of the salad comes together quickly. You could make this every day for a week and be happy.

Santa Maria-Style Colita De Cuadril

This was the best home-cooked steak I’ve had, including a sous vide steak I tried a few weeks later. Super flavorful, perfectly cooked. The trick is the reverse-sear, which Kenji describes well.

My butcher had Colita De Cuadril, instead of Tri-Tip, which was also just an unbelievable cut of beef. I’m sure the Tri-Tip is also great, but this cut would be worth seeking out.

Keralan Fried Chicken, Lowcountry Cardamom Waffles, and Spicy Maple Syrup

Emily’s Rating Chris’s Rating
8 / 10 8 / 10

I got my first new cookbook in awhile, and this recipe was the one that really stuck out to me. It was phenomenal. I would not say the fried chicken is better than Thomas Keller’s, but it is different and lends itself well to chicken and waffles. The spiciness from brining in buttermilk with serranos is not overpowering, but present and tasty.

Changes Next Time?  Double-breading a la Thomas Keller’s fried chicken results in better texture, but flavor is great as is.
